Oakwell Gold pork legs are selected and cured at an early stage to ensure freshness and maximum shelf life of the product. The leg is then extra trimmed with the removal of all vale fat ideal for the retail butcher. Once the legs are cured they are placed under a “live cover pickle” for 24 hours and then drained for an extra period of time keeping the water content to a minimum.
